GSH Diamond 8in Curve

The VG10 steel holds an edge way longer than my old knife, and the full convex grind makes slicing through dense veggies feel effortless. The diamond-pattern handle is more ergonomic than I expected too, my grip stays comfortable even after prepping a big batch of onions.
