The convex edge on these three knives is what sold me—it glides through finishing cuts with almost no resistance. I picked the three I use daily and the high polish finish makes cleanup ridiculously easy. The tension system feels tight and responsive out of the box.
The bundle math works out so well that I grabbed three without overthinking it, and the convex edge on each one is exactly what I needed for finishing work. The VG10 steel takes a razor edge and holds it, plus the high polish finish just looks incredible on the bench.
Picked three of these for the price of what one usually runs me, and the VG10 steel holds an edge like nothing else I've owned. The high polish finish makes them almost too pretty to use, but the tension system feels incredibly smooth right out of the box.
